I want to make a visual effect, let the picture or gif on the plugin change according to the different values of the knob or slider, is there any way to achieve this effect?

Check out the sliders example from Examples->Widgets->Sliders
That uses a custom slider thumb. Also check out Examples->Misc->KnobManSlider and Examples->Misc->KnobManSlider2 wchih crops an image in realtime to show only a portion of it.
